Microsoft didn't actually remove the familiar File, Edit, View, etc., menus from many screens in Windows Vista; it just hid them for a sleeker interface. To see those menus again, just tap the Alt key and release. A menu bar will appear. To hide the menu, tap Alt again.
Office 2007 programs are a little different since they use the new "Ribbon" interface, and thus do not have the traditional menu system. The Alt key will show tiny popup characters like "H" and "N" that indicate you can press Alt+H to go to the Home tab, or Alt+N for the Insert tab.
